Chef Caro (resident chef for Food24.com) visits Madagascar with Jenman Safaris!
In our quest for all things Madagascar related, we happened upon the most wonderful blog from a fellow Capetonian, who travelled on our Madagascar Dhow earlier this year.
Being the resident chef for Food24.com AND a trained Grande Cordon Bleu chef, Chef Caro has a lot of suggestions on cooking Madagascar style, as well as what to do with all that vanilla you bought on your Madagascar holiday... (Yes, we know it's still lurking in the back of your cupboard somewhere).

"We have been pretty busy both with our Dhow trips and with the building of our camps. It became obvious that we could not continue camping and not addressing the toilet issue. In order to do this, we had to secure our own spots to camp so we acquired 3 wonderful places. At Russian Bay and Mahalina we have built basic little bungalows and at Lokobie, we are building a permanent tented camp. All have showers and toilets, a kitchen and dining area and much thicker mattresses."
"We now have more time for snorkelling, fishing, sea kayaking, exploring and relaxing. Not having to put up tents and transport everything from the dhow each night makes a massive difference to the amount of free time, not to mention a way more comfortable camp."

"National Tourism Board of Madagascar announced that NO ENTRY VISA IS REQUIRED for a stay of maximum 30 days, until 31st December 2009.This is valid for all nationalities entering Madagascar. Clients will not have to pre-purchase a visa before departing, and will not have to purchase a visa on arrival to Antananarivo airport."
